Ingredients

  • 2 tablespoons oil (or water for oil-free)
  • 1 large onion, diced
  • 3 large carrots, chopped
  • 2 ribs celery, diced
  • 5 cloves garlic, minced
  • 1 medium rutabaga, chopped
  • 4 large potatoes, chopped
  • ¼ head green cabbage, shredded
  • 4 cups vegetable stock
  • ¼ cup soy sauce
  • Optional: 9 oz vegan beef or portobello mushrooms

Instructions

  1. In a large pot over high heat, add oil and sear the vegan beef or mushrooms until golden brown. Remove from pot.
  2. Reduce heat to medium and sauté onions, carrots, celery until softened; add garlic and cook until fragrant.
  3. Sprinkle flour over vegetables and stir for about a minute.
  4. Slowly pour in vegetable stock while stirring to avoid lumps.
  5. Add rutabaga, potatoes, cabbage, soy sauce, salt, pepper, sugar, bay leaves, thyme, and rosemary; stir well.
  6. Bring to a boil then reduce heat to medium-low and simmer uncovered for about 45-50 minutes until potatoes are tender.
  7. Return seared protein to the pot ten minutes before serving.
