  • 12 cups popped popcorn (about 1/2 cup unpopped kernels)
  • 1/2 cup unsalted butter
  • 1 cup packed brown sugar
  • 2 tablespoons light corn syrup
  • 10 oz vegan marshmallows (approximately 35 marshmallows)
  • 1 teaspoon vanilla extract

Instructions

  1. Pop the popcorn using your preferred method and set aside.
  2. In a saucepan over medium heat, melt the unsalted butter. Stir in brown sugar and corn syrup until combined. Simmer for 5 minutes while stirring constantly.
  3. Add the vegan marshmallows to the caramel mixture, stirring until completely melted and smooth.
  4. Pour the caramel sauce over the popcorn and gently toss until evenly coated.
  5. Spread the mixture on a baking sheet lined with parchment paper and bake at 250°F (120°C) for 30 minutes, stirring every 10 minutes.
  6. Allow to cool completely before breaking into pieces and serving.
