  • 2 tbsp lemon juice
  • 2 tbsp cornstarch mixed with 2 tbsp water
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • ½ cup white chocolate, melted and cooled
  • 23 tbsp milk
  • Fresh raspberries
  • White chocolate curls or shavings
  • Mint leaves

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. In a large bowl, cream softened butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla and melted white chocolate.
  4. Gradually mix in dry ingredients alternately with whole milk until just combined.
  5. Divide batter into prepared pans and bake for 25–30 minutes. Cool in pans for 10 minutes before transferring to wire racks.
  6. For raspberry filling, cook raspberries with sugar and lemon juice until syrupy; stir in cornstarch mixture until thickened and cool.
  7. For frosting, beat butter with powdered sugar; add melted white chocolate, vanilla, and enough milk to achieve desired consistency.
  8. Assemble by layering cake with frosting and raspberry filling; frost the exterior and decorate as desired.
