Instructions

  1. Preheat your oven to 350°F and grease two 8×4-inch loaf pans.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In a larger bowl, combine grated zucchini, vegetable oil, eggs, and vanilla extract until well mixed.
  4. Gently fold the dry ingredients into the wet mixture along with the chopped walnuts until just combined.
  5. Pour the batter evenly into the prepared loaf pans and bake for about 50–60 minutes. If necessary, cover with aluminum foil after the first 30 minutes to prevent over-browning.
  6. Allow the bread to cool in the pans for about 15 minutes before transferring to wire racks to cool completely.
